1 can of chickpeas 1/4 cup pumpkin seeds 3 tbsp mayonnaise (sub vegenaise for a plant based option) 1/2 tsp honey mustard 1 tbsp date syrup 2 tbsp fresh chopped cilantro sliced avocado sliced tomato hummus rustic bread of choice
1. In a bowl, mash your drained chickpeas. Add in mayo, date syrup, pumpkin seeds, and mustard.
2. Mix in your fresh cilantro, and a pinch of salt.
3. Take two slices of your rustic bread, and spread a good amount of hummus on each side.
4. Spoon your chickpea salad onto one slice, and top with avocado + tomato. Enjoy!
