A warming recipe for a crunchy coconut granola served with spiced and baked apples and pears.

Ingredients:
For the granola
6 cups (520g) Rolled oats
½ cup (75g) Hazelnuts roughly chopped
½ cup (75g) Pistachio roughly chopped
1 cup (236ml) fresh Orange juice
1 tbsp Vanilla paste
2 tsp flaky Sea Salt
1 tsp Cinnamon
½ cup (110g) Coconut Oil
½ cup (140) Maple syrup or Honey
½ cup (75g) Coconut flakes
For the baked apples & pears
2 large Apples
5 large Pears (3 for baking, 2 unbaked for dressing)
1 tbsp Cinnamon
1 tbsp Vanilla Extract
4 tbsp Maple syrup or Honey
3 whole Star anise
5 whole Cloves
1 tsp Sea salt
To serve
Fresh Thyme sprigs
Maple syrup or Honey
Coconut or Greek yogurt
Method:
For the granola
1. Preheat the oven to 300 F°/ 150°C/ Gas 2
2. Combine the oats, pistachio, hazelnuts, cinnamon, salt, and vanilla paste in a large bowl.
3. Pour the wet ingredients - coconut oil, maple syrup or honey, and orange juice into the dry ingredients, and toss to coat.
4. Spread the mixture evenly on two large baking sheets. Bake in the oven for 30 minutes, stirring every 15 minutes.
5. After 30 minutes of baking, split the coconut flakes between the two trays.
6. Bake the granola for another 10-20 minutes or until golden brown.
7. Let the granola cool in the pans. It will become crunchier as it sits.
For the baked apples & pears
1. Preheat oven to 390°F / 200°C / Gas 6
2. Roughly chop 2 apples and 3 pears into 1-inch-sized pieces.
3. Place into a paper-lined baking tray or dish.
4. Add the cinnamon, vanilla, maple syrup or honey, star anise, cloves, and seat salt, and stir to combine.
5. Bake for 1 hour, giving them a stir halfway through the cooking time.
6. Once cooked, remove from the oven and set aside to cool slightly.
To serve
1. On a serving plate, dollop a few large spoonfuls of yogurt.
2. Discard the star anise and cloves from the baked apples and pears. Add a few spoonfuls of baked apples and pears to the serving plate.
3. Sprinkle the granola, add raw slices pears, spring thyme sprigs, and finish with a drizzle of maple syrup or honey.
Notes:
-Granola can be stored in an airtight container at room temperature up to one month.
